Shrimp. Pizza.

Yep. I said those two magic words… shrimp & pizza. Or ‘za as we call it around here. Ok ok, we don’t say ‘za (all the time). Last week I hit up Pinterest for some shrimpspiration and figured out fast that I was going to be making shrimp pizza. How could I not?

After some cabinet raiding and garden searching I decided what would go on my pizza in addition to shrimp and I came up with: pesto, arugula, mozzarella, and marinated artichokes.

First, I made pizza dough. You could use store bought if you wanted of course.

I headed out to my garden to grab a couple of handfuls of basil.

I followed this recipe for pesto. You could use store bought as well. My basil plants have been good to me this summer so I have had an abundance.

The pesto can sit in the refrigerator until you are ready to use it (and for days after that as a matter of fact).

Once my pizza dough was ready I preheated the oven to 475. I placed JUST the dough in the oven for about 7 minutes so that it could get nice and crisp.

Meanwhile cook the shrimp with a little olive oil and salt and pepper.

Yum. Look at those scrimps.

Chop the shrimp up into bite size pieces.

Top the pizza dough (that has been cooked in the oven for about 7 minutes) with pesto, shrimp, mozzarella, and artichokes.

Turn the broiler on high and place pizza under it until the cheese begins to bubble.

Looking pretty good, eh?

You know what would make this better? Yep, arugula. Top the pizza with a couple of handfuls of arugula.

I love pizza. Let me rephrase. I love shrimp pizza.

This is worth trying. Trust me.
