Its So Caprese

That was supposed to be a pun on “Its so easy.” It didn’t work did it?

Well, it has been a super busy week for me and I am so so so glad that it is coming to an end. With Summer break on the horizon, you just about can’t get me down… well, except for all of the work that I have to do until I exit those doors at the end of May. With this week being so busy I barely spent anytime in the kitchen. I cooked dinner once. Once! It was definitely a deviation from my usual 4-7 cooking days a week, but I have to say that I did not miss cleaning the kitchen.

I am working on a re-do of a recipe tonight that I made a while back so I am going to see how that goes, but I thought that I would a simple, but delicious recipe from Monday night.

First, Stellar would like to tell you “hello” and for you to leave him alone while he eats his dinner. Or now, while he protects his dinner.

Here is my Caprese Chicken Recipe. Its so good. Its so simple. Its so delicious.

Start by heating up your grill (at least that’s what I did).

Then get these ingredients:

First you need to marinade the chicken Balsamic style… here is recipe for that:

Throw chicken in a marinade of balsamic vinegar, salt and pepper, and a little olive oil (I did the same thing for the Caprese Flatbread with Balsamic Chicken recipe).

Grill the chicken to your liking. I do mine with the grill at 450 for about 10 minutes per side with the lid closed. They will get nice and browned.

Slice tomato and place a few down on the plate. Sprinkle with salt and pepper.

Top with basil leaves.

Top with chicken.

Drizzle the chicken with balsamic reduction. I bought mine at the store. You can totally make it by just reducing some balsamic vinegar… but man… its just so easy to buy.

Top the chicken with a few more slices of tomatoes. Sprinkle them with salt and pepper. Last, top with some more basil leaves.

And there you have it! The best, most wonderful, quickest, yummiest dinner that I have made in a long time.

This recipe just looks like summertime.

I love Balsamic Reduction. I mean you can literally put it on just about anything. Its super easy and cheap to make and I usually do. When I saw it at the grocery store the other day I just splurged a little and bought it. It saved me a pot on the stove.

I have plans this weekend for some more in depth cooking so hopefully I will be sharing that stuff soon as well… I also look forward to less stress next week… but maybe I will just have to wait until summer.
